1 Umberto’s Bakery Baguette or Pane Di Casa, sliced
3 ripe tomatoes, diced
1/4 red onion, finely chopped
2 cloves garlic, minced (plus 1 clove for rubbing)
1/4 cup fresh basil leaves, chopped
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste
Optional: 1/4 cup crumbled feta or fresh mozzarella
Olive oil for drizzling
Instructions
1. Prepare the Bread:
– Preheat the oven to 200°C (400°F).
